The Negotiator
Matteo D'Ottavio's competition-proven Orea recipe that uses the "negotiated" flat filter technique — manually shaping the filter to sit flush inside the brewer for zero-bypass extraction. Five measured pours with precise timing produce a sweet, high-extraction cup with excellent clarity. Works best with light-roast coffees.
